The Canonigo is on the very top of my list of places to stay - I still haven't stayed (The last time I enquired, they wanted me to stay three nights minimum, and I only wanted two...) It is listed on the site as Simon and Thomas stayed here for a week in 2002, just as it had been refurbished.
They hardly left the place...
 Built in a 14th century tower the hotel is almost next door to the Cathedral, set in the quietest, most relaxing of places, yet, totally right on top of everything. (It is only 2 a minute walk to the nearest gay night club and 3 minutes to some of the best restaurants in Ibiza.) If you really want to feel that you are staying in the 'Old Town' this has to be the place to stay.
There are seven rooms in all and each room is unique and totally charming. All have excellent views across the town/out to sea, the two suites at the top of the building have roof terraces, the smaller rooms have a bathroom with a Jacuzzi.
The hotel's communal spaces are only open to residents, adding to the intimate feel of this hotel. Service is excellent, and you may be overrun with clean towels...
